- 2 kg beans
- 4 kg onions
- 3.5 kg carrots
- 2 l broth
- 4 kg donuts & capsicum
- 1 sachet of bay leaves
- 2 l oil

HOW TO PREPARE THE RECIPE Bean zacusca:
I soaked the beans (overnight) and then boiled them until it boiled. I put the onion and the carrot through the grater of the robot. I cut the donuts and put them in the mincer. In a (large) pan I poured the oil and let it heat up a bit, then I added the onion and mixed for a few minutes, the carrot and the donuts. I mixed well and let it simmer for about 1 hour (of course, stir continuously so that it doesn't stick). I drained the beans, passed them through the mincer and added them to the pan. I also poured the broth and let it boil for about half an hour. At the end I matched with salt, pepper and sprinkled the bay leaves.
I filled the jars, which I sealed, then boiled in a bain-marie for about 2 hours.
I got 45 jars :)
